Elevated Eating: A Healthy Twist On Pizza

Gooey cheese, warm crust, smothered in a sauce but low carb and gluten-free! Pizza is by far a crowd favorite, and mostly everyone’s go-to cheat meal. Suppose you could combine a delicious slice of pizza with the benefits of eating vegetables but avoid all the guilt from the extra calories. Celebrate national Pizza day with a healthy alternative to a delivery box pizza. Try out this take on a cauliflower crust for your next pizza craving.

Ingredients:

1 Head of Cauliflower

1 Large Egg

½ Cup Low Fat Shredded Mozzarella

½ TBS Basil

½ TBS Oregano

Cauliflower Crust:

Preheat oven to 450० degrees Fahrenheit

  1. Wash and dry cauliflower removing stems and leaves, then separate into small florets leaving ½ inch of steams. 
  2. Transfer florets into a food processor and pulse until finely ground (should mimic rice).
  3. Transfer into a microwavable safe bowl and microwave for 4-5 min or until softened. Drain excess water by using a towel or cheesecloth if available to make the cauliflower as dry as possible. 

  4. In a large bowl, mix cauliflower, egg, mozzarella, basil, oregano, and salt/pepper to taste.
  5. Spread mixture evenly onto a greased baking sheet or pizza pan. Place into a preheated oven for 12-15 minutes or until lightly browned.
  6. Top off with a low sodium marinara sauce, fat-free mozzarella, your favorite vegetable toppings, or protein such as shredded chicken if desired.  
  7. Return the pizza into the oven for 3-5 minutes or until the cheese has fully melted.
