Elevated Eating: Turkey Chili

Happy national chili day! Nothing is more comforting than a giant hearty bowl of homemade chili. To celebrate today, Elevated Eating has put together a mouth-watering recipe that is high in protein, low in fat, and tastes good too. Grab a giant stew pot and get ready to enjoy your new favorite recipe.

Ingredients:

2 TBS Olive Oil

1 Yellow Onion (diced)

1 Red Bell Pepper (destemmed and seeded, diced) 

3 cloves of Garlic (Minced)

1 lb of Lean Ground Turkey

3 TBS of Chili Powder

2 cups Low Sodium Chicken Broth

2 Medium Tomatoes (diced)

1 can of black beans

1 can of red kindy beans

1 can of white kindy beans

1 can of corn

Instructions:

Heat olive oil on a medium-high in a large stew pot, toss in diced onion season with salt and pepper, cook for 3-4 min until onion is translucent. Add in bell peppers and garlic season with salt and pepper, stir for 2-3 min until softened.

Add the ground turkey to the pot of cooked vegetables, season with chili powder and salt and pepper to taste. Once the meat is browned, add chicken broth, tomatoes, beans, and corn (feel free to add more of your favorite vegetables to make it customizable). Bring the pot to a boil, then reduce heat to a low simmer and cover for 30 min. 

Turn off the stove and ladle a serving of delicious chili into a bowl. Dress your bowl of chili with your favorite toppings. Ours include low-fat cheese, fat-free sour cream, and avocado. Enjoy!
